What's the Difference Between Quick Lister and Easy Lister?

Quick Lister & Easy Lister are both individual/single item listers -- they let you list items one at a time (not in batch).
Quick Lister - creates formulas just like sku grid does and has more customization options for your listings. If you list with a formula identical to the one you have as your default formula in sku grid, your items will not override.
Easy Lister - has less settings/customization, a different profit calculator (pricing wizard), and because the formulas are constructed differently, when you list, your items will always be overridden when they get to sku grid with a custom formula. Easy Lister is more "newbie" friendly in general.
